A Feast of a Holiday Cooking Demonstration.


September 24, 2004 -- In Lancaster County Pennsylvania, November, 12th through the 14th and December 3rd through the 4th Chef/Innkeeper Carl Kosko of the Harvest Moon Bed and Breakfast will create an informative weekend that is sure to intrigue your culinary curiosities. A weekend filled with fine dining, demonstrations with a theme, cheese tasting, and field trips. Chef's culinary background and travels have allowed him to experience several flavors of the world. As our guest, you will observe, learn and savor a gourmet weekend at the Harvest Moon.

The theme for these two weekends is as follows:

"A Grand Meal for the Holidays"
The holidays are truly a grand time of the year. Whether you use well-loved recipes handed down through the generations, or try a trendy new menu, learn to make your dinners a work of art. We'll show you how easy it can be. Our first demonstration is created for entertaining during the holidays. From soup to nuts, you'll enjoy a late fall menu with just the right touch of traditional. Are you hungry yet?

Roasted pumpkin and leek soup served with Parmesan croutons and thyme crème fraiche.

Wild greens tossed with maple marinated chicken, walnuts and dried cranberries. Served with a Sweet Poppy Seed Dressing.

Shrimp, dill and goat cheese filled ravioli finished with a Braised tomato coulis.

Oven roasted goose/duck served with a dressing of pork, fig and currants. Finished with a soft ripened bleu cheese demi-glace. Accompanied with garlic braised fennel root.

"Bismarck" An Austrian favorite with a different name, a baked pancake puffed high in the oven and served with slivered almonds fresh raspberries and drizzled with "Wilbur's" chocolate.
